Traditional Mexican Breakfast Dish: Huevos Rancheros

Huevos Rancheros is one of the traditional Mexican foods made with corn tortilla, spicy tomato sauce and egg. Sometimes beans, avocado, and cheese can be added. It is easy and simple to cook. You can use flour tortilla instead of corn tortilla.

Ingredients
4 Tortillas, 2 tomatoes, 1 onion, 4 cloves garlic, 1/2 can (6 oz) tomato pastes or pasta sauce, 2 eggs, 2 chili peppers, 1/2 avocado, 1 slice of orange, 1/4 tsp oregano, 1/2 tsp. cilantro, 1/2 tsp. cumin powder (you can skip it), 1tsp. salt, 1Tbs. olive oil

Directions
1. Prepared the ingredients – dice onion and tomatoes into 1 inch, and mince garlic. Peel and slice avocado.
2. Grease a sauce pan with olive oil. Cook garlic, onion with salt until onion is transparent. Add diced tomatoes with herbs; continue to cook.
3. Put tomatoes pastes (or pasta sauce) into the pan and mix together well.
4. Chop 2 peppers, put into the pan. Add cumin powder and cilantro.
5. Bake both sides of tortillas on a new pan.
6. Fry eggs.
7. Transfer tortilla on a plate. Add tomato sauce on the tortilla. Place egg fry on the top and slice of avocado and orange.
