Three-Cheese Calzone

Calzone is a folded Italian pizza. Italians often fill their calzone with leftover vegetables and cheese.

Ingredients
1 pound refrigerated pizza dough
1 cup fresh ricotta
1 1/4 cup grated mozzarella
1/4 cup grated Parmesan
1/2 cup mushroom, chopped
1 bunch spinach, chopped
1/4 pound thinly sliced salami
3 garlic cloves, sliced
2 tbsp olive oil
1 cup tomato sauce
Salt and pepper

Directions
1. Preheat the oven to 400 degrees F. Divide the dough into 4 pieces. On a floured surface, roll and stretch them into 8-inch rounds.
2. Heat a pan over the medium heat. Add olive oil and garlic; saute mushroom and spinach.
3. In a bowl, combine all cheeses (reserve 1/4 cup of mozzarella), vegetables, and salt and pepper to taste.
4. On one side of each round of dough, place the tomato sauce and salami, and top with the cheese.
5. Fold the dough over the filling and pinch the edges to seal. Sprinkle mozzarella cheese on the top.
6. Transfer to a parchment-lined baking sheet and bake for 10 to 15 minutes.
