Oatmeal Chocolate Chip Muffins

Oatmeal Chocolate Chip Muffins is a healthy muffin, good for a breakfast menu.

Ingredients
1 cup flour
1 cup rolled oats
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/3 cup brown sugar
1 egg
1/4 cup butter, at room temperature
1 1/2 tsp vanilla extract
1 cup milk
3/4 cup semisweet chocolate chips

Directions
1. Preheat oven to 350 degrees F.
2. In a bowl, combine oats and 1/2 cup of milk. Allow to stand for 10 minutes.
3. Meanwhile, in a separate bowl, whisk together egg and brown sugar well until smooth.
4. Stir in butter and vanilla. Mix well.
5. Add in flour, oat mixture, baking powder and baking soda, salt and cinnamon; mix well.
6. Add remaining milk and chocolate chips. Combine well.
7. Fill each cup of one 12-cup muffin tin 2/3 full.
8. Bake for 15-20 minutes.
