Tomato and Haricots Verts Salad

Dress up simple green beans with olive oil and balsamic vinegar.

Ingredients
1/2 pound haricots verts, trimmed and cut into 2-inch slices
2 tbsp extra-virgin olive oil
1 tbsp quality balsamic vinegar
2 tomatoes, cut into quarters
1/2 purple onion, thinly sliced
Salt and freshly ground black pepper

Directions
1. In a saucepan, bring salted water to a boil.
2. Blanch the green beans until tender. Drain; submerge in ice water; drain.
3. In a salad bowl, toss the beans with the olive oil, balsamic vinegar, onion, and tomatoes.
4. Season with salt and pepper. Serve on a plate.
