Ingredients
8 loin lamb chops
1 tbsp garlic, finely chopped
1 tsp kosher salt
2 tbsp fresh rosemary, finely chopped
1 tsp freshly ground black pepper
2 pounds potatoes, 8 wedges for each
4-5 tbsp Extra virgin olive oil
Directions
1. Chop the garlic and rosemary.
2. Press garlic and rosemary onto both sides of lamb chops and sprinkle with salt and pepper.
3. Place the sliced potatoes in a medium bowl. Drizzle 2 tablespoons of oil and toss to coat the potatoes with the mixture.
4. Grill the potatoes over medium heat for about 15 minutes.
5. Lightly add oil on both sides of lamb chop. Spread the remaining half of the seasoning mixture on both sides. Roast the lamb chops over medium heat, about 10 minutes for medium rare, turning once.
6. Serve warm with the potatoes.
