How to Make Pan-Roast Boneless Chicken Breasts

1. Prepare a sturdy ovenproof skillet.

2. Pat the chicken on both sides with salt and pepper.

3. To prevent curling during cooking, give chicken breasts a few solid whacks with the flat side of a meat mallet.

4. Heat 1 tbsp olive oil and butter for 2 chicken breasts over high to medium-high heat.

5. Cook chicken breast without disturbing until the bottom side is browned (it takes about 2 minutes).

6. Place the skillet in the oven, without turning the chicken, and cook until the breasts are done.

7. Let it rest for five minutes so the juices settle before eating.
