Ingredients
1 whole chicken, cut into 8 pieces
3 tsp salt
1 cup buttermilk
2 eggs
4 cups water
1 cup flour
2 tbsp cornmeal
2 tsp dried thyme
6 cups shortening or vegetable oil
Directions
1. Season 8 pieces chicken well with salt and pepper. Set aside.
2. Mix buttermilk, eggs, and water. Dip chicken pieces in this mixture.
3. Combine flour, corn meal, dried thyme in a heavy plastic bag.
4. Shake chicken in bag until well coated.
5. Heat oil to 350°F and place chicken in a skillet. When golden brown, turn. (*Note: Cover for the first 5 minutes to get the crispy chicken.)
6. Cook additional 15-20 minutes. Drain chicken on paper towels.
