Ingredients
1 (7 ribs) rack of lamb
4T olive oil
2T minced garlic
2t fresh rosemary or thyme
1t salt and pepper
1/2 cup fresh bread crumbs
Directions
1. Marinade: In a large bowl, combine garlic, rosemary, salt, pepper, and 2t olive oil. Rub the rack all over with the mixture and refrigerate overnight or at least 2 hours in room temperature.
2. Heat 2t olive oil in a large heavy oven proof skillet over high heat. Sear the rack of lamb on both sides.
3. Roll the rack of lamb in the bread crumb mixture. Cover the ends of the bones with foil so that they do not burn. Place the lamb rack bone side down in the skillet. Roast the lamb in preheated oven (400 F) 10-20 minutes, depending on the degree of doneness you want. Remove from the oven, cover with foil and rest 5 to 7 minutes.
4. Slice between the bones and serve.
