The term game birds are defined as "a bird that is hunted in the wild for sport and/or food". In San Diego, aside from being a sport, these game birds are then turned into local delicacies served in local restaurants.
San Diego Reader recently reported that the locavores or a person who only eats locally grown foods are giving the spotlight to their favorite delicacy, the game birds.
Chef Brian Kelly of the OB Warehouse just released his new creation, the Greens n' Bird. It was tried and reviewed by food critic Pemberton Throckmorton III, and after having a taste of the greens 'n bird dish, the critic had nothing but good things to say.
He shared, "San Diego has long been a trendsetter when it comes to locally sourced produce...It's not just Chino Farms anymore, you know? We're pulling from back yard gardens, rooftop gardens - sometimes, you've even got a couple of raised beds in the alley behind the restaurant! But, up until now, local protein has been a trickier business. There are plenty of pigs and cows in this town, but unfortunately, most of them are technically people. I don't know what sparked this new development, or where the birds are coming from, or even what kind of birds they are. But if Chef Kelly says it's local, I believe him. And if my taste buds say it's delicious, I believe them, too. In the end, isn't that what matters?".
According to the San Diego Union Tribute , in the mid-west, its a multi-billion dollar industry that's why it is not surprising to see local chefs and restaurateur turning game birds into delicacies. Although some prefer not to eat bird meat, locavores patronize these game bird dishes mainly because it is locally produced and some argue, the taste is distinctly delectable as well.
