Apparently, the criteria for judging a steak vary greatly depending on the competition. For example, this Seville Rotary Steak contest has simpler criteria based on appearance, degree of doneness, tenderness and taste. However, the World Steak Challenge 2015 has more extensive criteria which include appearance, smell, color, marbling, consistency of fat trim, tenderness, aroma, flavor and succulence.
