Breakfast burritos can be one of the best weekend brunch menu. Easy and no need to hurry. This is a Mexican-American standard - ground beef, scrambled eggs, and cheddar cheese wrapped in a flour tortilla.
Ingredients
 8 flour tortillas
 1/2 pound ground beef
 4 eggs
 3/4 cup shredded cheddar cheese
 1 small onion, chopped
 2 cups parboiled and diced potato
 1 head of lettuce, cut into 1-inch slices
 Salt and pepper to taste
Directions
 1. In a pan, cook the ground beef thoroughly. Stir in the onion and cook until onion is tender.
 2. Add salt and pepper to taste and diced potatoes. Set aside.
 3. In a small bowl, whisk the eggs. In another pan, scramble the eggs over medium heat.
 4. Warm flour tortillas on a hot griddle.
 5. Assemble burritos in this order: warmed tortilla - egg - cheddar cheese - lettuce - beef. Fold the tortilla making a burrito.
