Ingredients
1 can garbanzo beans, drained and rinsed
1/3 cup olive oil
3 tbsp lime juice
1 tsp minced garlic
1/2 tsp ground cumin
1/2 tsp ground red pepper
Salt and freshly ground black pepper
Directions
1. In a food processor, blend first 6 ingredients and 2 tablespoons water for 1 minutes.
2. Stop and add salt and pepper. Blend another 1 minute.
3. Transfer to a bowl. Cover and chill 2 hours or up to 3 days.
* Drizzle with 1 tablespoon olive oil just before serving, if desired.
