Ingredients
1 stick unsalted butter
1/2 cup brown sugar
2 tbsp heavy cream
1 tbsp corn syrup
1 tsp vanilla extract
1/4 cup all-purpose flour
3/4 cup old-fashioned oats
Pinch of salt
Directions
1. In a large bowl, beat the first 5 ingredients using electric mixer until fluffy and light.
2. Add flour, oatmeal, and salt. Beat just until dough forms.
3. Transfer the dough to waxed paper; shape dough into ball. Refrigerate for about 30 minutes.
4. Preheat oven to 350 degrees F.
5. Place 1 teaspoonful of the dough 3 inches apart on the cookie sheets in the preheated oven. Bake for 10-12 minutes.
6. Remove the cookies with a spatula; allow them to cool completely on a wire rack.
