Asparagus Onion Bacon Tart

Ingredients
1 bunch asparagus, cut into 1-inch pieces
5 slices bacon
1/2 onion, finely chopped
1 tsp fresh thyme leaves
1 cup goat cheese or ricotta
1 pie pastry
1 egg, beaten

Directions
1. Preheat oven to 450°F.
2. Heat a large skillet over medium heat. Cook bacon until crisped.
3. Add onion and thyme to skillet and cook until softened.
4. Add asparagus and cook until slightly golden.
5. Roll out the pastry onto a lightly floured surface into a large rectangle.
6. Spread the cheese evenly over the pastry, leaving 1/2-inch border around the edges. Pour the asparagus mixture and bacon strips over the cheese.
7. Brush the edge of the tart with the egg. Bake until golden for about 25-30 minutes. Let sit 10 minutes; cut in wedges.
