Herb Roasted Pork Loin

Ingredients
4 pounds boneless pork loin
salt and pepper
2 tbsp olive oil
4 cloves garlic, minced
1 tsp dried rosemary
1 tsp dried thyme
1 tsp dried basil

Directions
1. Preheat oven to 475 degrees F.
2. Rub the pork loin with the herbs. Sprinkle with salt and pepper.
3. Place the pork loin on a rack in a shallow roasting pan, and cook 30 minutes in the preheated oven.
4. Reduce the heat to 425 degrees F and roast for an hour.
5. Remove the pork loin from the oven and rest for 20 minutes and serve.
