Colcannon Recipe

Ingredients
10 potatoes, cut 1-inch
3/4 cup milk
1 1/2 cups boiled green cabbage or kale
1/2 cup chopped green onions
2 tbsp butter
Salt and pepper to taste
Crumbled cooked bacon and minced fresh parsley

Directions
1. In a large saucepan, boil the potatoes with salted water and simmer them.
2. While 1 is simmering, in a steamer, bring cabbage and water to a boil.
3. Drain, reserving cooking liquid, so that cabbage can keep warm.
4. Drain the potatoes.
5. In a small saucepan, bring milk and onions to a boil; remove from the heat.
6. In a large bowl, mash potatoes. Add this milk mixture to potatoes; beat until blended.
7. Stir in the cabbage, butter, salt and pepper to taste. Drizzle with bacon and parsley.
