Japchae is a stir-fried noodle dish mixed with slightly cooked vegetables.The noodle is made with yam starch and it looks similar to vermicelli. It is one of most served party foods.You can serve it as a side dish or a main dish. Also you can make Japchae rice by simply putting Japchae on the top of rice.
Ingredients
Starch noodles (Dangmyun)
150 grams of beef
1 bunch of spinach
1 medium size carrot
1 medium size onion
Mushrooms (5 dried shiitake and 1 package of white mushrooms)
3 cloves of garlic
7-8 green onions
Soy sauce, sesame oil, sugar, pepper, and sesame seeds
Directions
1.Cook the sweet potato noodles in a large pot of boiling water for 4 to 5 minutes. Immediately drain and rinse thoroughly under cold water. Be sure not to overcook the noodles, or they will lose their chewy texture. If you like, cut the noodles with scissors into 6- to 7-inch lengths for easier eating.
2 .Add 1 tbs of soy sauce and 1 tbs of sesame oil. Mix it up and set aside.
3. Blanch the spinach in boiling water. Rinse immediately under cold water, squeeze the water from the leaves and form into a ball, and then cut the ball in half. Combine the spinach, half the garlic, 1/2 teaspoon of the sesame oil, and 1/4 teaspoon salt in a small bowl. Set aside to let the flavors soak in.
4. Place a few drops of vegetable oil on the pan and add your beef strips and your sliced shitake mushrooms. Stir it until it’s cooked well, then add 3 cloves of minced garlic, ½ tbs soy sauce and ½ tbs sugar. Stir for another 30 seconds and then put it into the large bowl.
5. Add the onion and carrot and cook until the onion is translucent, about 3 minutes. Add the green onions and stir-fry for another minute. Remove from the heat.
6. Add 2 tbs of soy sauce, 3 tbs of sugar, 2 tbs of sesame oil, and 1 ts of ground pepper to the large bowl. Mix all ingredients, then sprinkle 1 tbs of toasted sesame seeds on the top.
