Aside from its excellent taste, the butternut squash trend is also a product of people learning how to grow vegetables in their gardens.
According to Persistent Market Research, Butternut Squash is a type of winter squash that grows on a vine, which is also known as butternut pumpkin or gramma in Australia and New Zealand. Like that of a pumpkin, it has a sweet and nutty flavor. Aside from its unique and tasty flavor, it is also known to have many health benefits.
With the rising demand for healthier food choices, butternut squash quickly became a household favorite by many, especially on the East Coast.
Reports from The Chronicle Herald revealed that it was the most searched food trend based on Google Trends data. Specifically, the Newfoundlanders started the search trend back in January and again in August 2020.
The rising trend is also seen in New Brunswick and Nova Scotia, and multiple recipe searches for Butternut Squash were done.
According to FN Health Nutritionist and Registered Dietitian Felicia Newell, the butternut squash's popularity began in Newfoundland before the COVID-19 pandemic. As the whole world entered into the global pandemic crisis, many chose to shift towards a more plant-based diet.
Since Butternut Squash is readily available in Canada and is easily grown, it became a go-to ingredient for many.Also, another reason for its popularity has to do with its health benefits. It is rich in health-supporting nutrients like vitamin A and potassium.
Moreover, it is a perfect source of fiber, vitamin C, calcium and is low in carbohydrates and calories. Vitamin A is vital for regulating cell growth, eye health, bone health, and immune function. And vitamin C is a water-soluble nutrient needed for immune function, collagen synthesis, wound healing, and tissue repair.
One of the simplest ways to prepare Butternut Squash is to puree it. You can start by slicing a butternut squash in half lengthwise and scoop out the seeds. Place the sliced pieces on a foil-lined baking sheet, top the halves evenly with the butter and brown sugar, and then roast it for about an hour.
After removing the squash from the oven, let it cool for a few minutes and put the flesh into a food processor. Add in flavorings and puree the squash until silky smooth.

Another simple recipe for Butternut Squash is by roasting it that brings more of its flavors out. Start with a preheated oven of 400 degrees F. Next, peel, slice, and scoop out the seeds of a large Butternut Squash.
Using a large bowl, toss butternut squash with olive oil and garlic and season it with black pepper and salt. Put the coated pieces on a baking sheet and roast them in the preheated oven until the squash is tender and lightly browned.
