Ingredients
2 lb mixed dried fruit
6 oz brown sugar
1 cup Irish black tea
4 tbsp Irish whiskey
Zest of a lemon, and half of juice
4 eggs
3 tbsp whole wheat or all-purpose flour
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
Directions
1. In a large bowl, place fruit, sugar, lemon zest and juice, black tea, and whiskey and let it soak overnight.
2. Preheat oven to 300 F.
3. Brush 8x8 cake pan with butter.
4. Beat 4 eggs and mix them with vanilla extract and pour over the soaked fruit and mix thoroughly.
5. Sift flour, baking powder, nutmeg, and cinnamon together. Add the sifted powder to fruit mixture and mix.
6. Spoon the batter in and bake about 2 hours. Serve.
