Daniel Humm and Will Guidara, the duo behind New York City's three Michelin-starred restaurant Eleven Madison Park, are making their way into the fast casual market.
As reported by the Wall Street Journal, The pair are planning to open a new establishment in 2016 called "Made Nice", which is named after the hospitality group they founded in 2011.
Located on West 28th Steet in Manhattan, "Made Nice" will be a more accessible location than the group's decidedly more upscale roster: The NoMad, NoMad Bar, and the aforementioned Eleven Madison Park, where a meal for two can set you back almost $1,000.
"The menu won't be burgers and burritos, though. Instead, expect composed plates of grains, starches, proteins, and seasonal vegetables that are more in line with the current vegetable-heavy vogue." Says Grub Street.
A meal will cost around $10 - $15.
Humm and Guidara are the latest in a growing line of fine dining minded restauranteurs that have expanded to more casual concepts.
Danny Meyer, their former partner at Eleven Madison Park, was one of the first to take the plunge with his Shake Shack burger chain. The brand now has 66 locations and has expanded outside the US into cities like Tokyo, Moscow, London, and Dubai.
San Francisco Daniel Patterson walked away from the kitchen of his two-michelin starred restaurant Coi in order to start an organic fast food concept called Loco'l with Los Angeles food truck pioneer Roy Choi.
While David Chang, another New York dining institution, is planning a fried chicken sandwich centered fast food concept.
"I think there's been a wide open, oversized bulls-eye waiting for the right kind of fast-food restaurants to hit it, And by hitting it, I mean doing things that go against our association with what it means to eat fast food." Said fellow Michelin starred chef Dan Barber to the WSJ.
