If you don't know Los Angeles restaurant Plan Check, then you must be living under a rock.
Known for some insanely innovative dishes, the South Fairfax restaurant has just made another invention that's definitely going to make your jaw drop, and start dripping a pool of saliva.
The newest invention is called "Ketchup Leather" (photo here) and though it might sound like something you wouldn't want to eat, you definitely want to have it on your burger, and probably any other dish you'd like to put ketchup on.
So what is Ketchup Leather? FoodBeast explains: "[...] The tangible condiment is actually solidified ketchup."
Food Steez actually visited the restaurant recently to see how they actually put burgers together. The YouTube channel writes:
"When he brought us into the kitchen one of the first things he pointed out was an odd red square that frankly looked like a fruit roll-up, nudging me to try it, I was quite excited to learn that it was actually dehydrated ketchup, what Chef Ernesto coined as Ketchup Leather, which rehydrates as soon as you put the patty on top without soaking the toasted bun. A lot of people believe that the better the burger the fewer the ingredients but sometimes you need to throw caution to the wind and dress it up a little. In addition to the ketchup leather, there are mixed pickles, schmaltz onions, and a house made [American Dashi] cheese, bacon, and a fried egg.... Yeah take a minute to process that, we did."
Chef Ernesto better get a patent for that Ketchup Leather - fast!
