Rice pudding is one of the most comforting desserts. This is the one of the basic and easiest recipes.
Ingredients
2/3 cup short grain white rice
1/4 cup sugar
1/4 tsp nutmeg (optional)
2 1/2 cups whole milk
1 tbsp butter
1 tsp vanilla
1 egg
2 tbsp milk
1/4 tsp cinnamon
1/4 cup raisins (optional)
Pinch of salt
Directions
1. In a medium saucepan, combine rice, sugar, salt, nutmeg, the 2 1/2 c. milk, butter and vanilla.
2. Bring to a boil and boil for 20 minutes over low heat, stirring frequently.
3. Beat the egg and the 2 tbsp of milk together. Add gradually to the saucepan, stirring swiftly.
4. Remove from the heat. Stir in the raisins. Sprinkle cinnamon on the top and serve.
