Butterscotch pudding is a nostalgic brown sugar and butter combo. It tastes better with whipped cream on top.
Ingredients
1/4 cup unsalted butter
1 cup dark brown sugar
3/8 cup cornstarch
1/2 tsp salt
2 egg yolks, beaten
2 cups whole milk
1 tsp vanilla extract
Directions
1. In a saucepan, stir together sugar, cornstarch and salt. Place over low-medium heat and stir in the eggs and milk (eggs shouldn't be cooked by the heat).
2. Cook until mixture thickens enough to coat the back of a metal spoon.
3. Stir in vanilla extract and butter. Chill in refrigerator before serving.
