Ingredients
1 cup butter
1 cup sugar
1 egg
2 1/4 cup flour
1/2 tsp baking soda
1 tsp vanilla
1/4 tsp lemon zest
Pinch of salt
Directions
1. In a bowl, beat butter and sugar until light and fluffy. Beat in egg, vanilla and lemon zest.
2. In a separate bowl, combine flour, baking soda and salt.
3. Stir 2 into 1.
4. Divide the dough into thirds and refrigerate until firm.
5. On floured surface, roll each dough 1/8 inch-thick. Cut the dough with cookie cutter.
6. Bake at 400 F for about 7 minutes. Let cool on the rack.
7. Decorate the cookies as you want.
