This pasta with shrimp and garlic is perfect for a weekday dinner, because it's elegant enough to serve guests, but simple to cook in a short time.
Ingredients
1 pound shrimp, peeled and deveined
15 cloves garlic
1/4 cup olive oil
1 1/4 cup heavy cream (or half and half)
1 pound pasta (any type you like)
1 cup grated Parmesan cheese
1/2 cup parsley, finely chopped
Directions
1. Boil a large pot of water over high heat. Boil garlic 2-3 minutes.
2. Add shrimp; cook for 3 minutes until shrimp are pink; drain.
3. Peel and mince garlic. Heat oil in a skillet over medium heat. Sauté garlic.
4. Add the heavy cream; reduce heat to low and simmer about 2-3 minutes until cream thickens.
5. Stir in shrimp, Parmesan cheese, and parsley. Season with salt and pepper.
6. Cook pasta in boiling water until al dente; drain. Add it to the sauce and combine well over the remaining heat of the stove.
7. Transfer to the serving bowls. Garnish with parsley.
