Ingredients
2 pounds lamb
2 pounds potatoes, diced
1 pound carrots, diced
1 pound onions, chopped
2 cups lamb or chicken stock
2 tsp thyme
coarse salt
freshly ground pepper
2 tsp parsley
Preparation
1. Place lamb with thyme and parsley in a saucepan and add the stock; boil.
2. Add onions, potatoes, and carrots; season with salt and pepper; cook until vegetables are tender.
3. Sprinkle with parsley and serve.
