Irish Potato Pancake: Beef Boxty

Ingredients
Boxty
2 cups potato, grated
1 cup flour
1 tsp baking powder
1 tsp salt
1 egg
1 cup buttermilk
2 tbsp butter

Braised beef
1 pound ground beef, cooked and drained
2 tbsp butter
1 onion, thinly sliced
1/2 cup Guinness stout beer
1 1/2 cup beef stock
3 carrots, sliced
12 oz. frozen peas
1 sprig thyme
1 bay leaf
salt and freshly ground pepper

Directions
Braised beef
1. In a large pan, brown the ground beef and drain; set aside.
2. Melt butter in the same pan over the medium heat. Saute sliced onions until soft. Add the beer and heat until reduced by half.
3. Add the beef stock, thyme and bay leaf and bring to a boil; reduce the heat to low.
4. Add the ground beef that was set aside, carrots, and frozen peas; simmer on low heat for 1 to 2 hours.

Boxty
1. Peel and grate the potato; pour the buttermilk over the top.
2. Sift flour, baking powder and salt into a large mixing bowl.
3. Add grated potatoes with buttermilk; add the beaten egg into the dry ingredients; mix well. (The batter consistency will be like pancake batter's.)
4. Melt the butter on a skillet. Pour batter into the skillet in 1/3 cup portions; spread the batter out to approximately 5 to 6 inches in diameter; flip when cooked and cook the other side until golden brown. Repeat until all batter is used.
