Ingredients
4 cups rhubarb, chopped
2 tbsp orange juice
1 cup sugar
4 cups strawberries
1 1/4 cups whipping cream
Directions
1. In a large saucepan, cook rhubarb and orange juice over low heat, covered, stirring occasionally until rhubarb is tender.
2. Stir in sugar; cook until sugar is dissolved. Remove from the heat and cool.
3. Puree strawberries (save 2-3 strawberries for garnish); stir into cooked rhubarb mixture. Cool rhubarb and strawberry mixture in the refrigerator.
4. Whip cream in a large bowl; fold in the fruit mixture.
5. Transfer to a serving bowl. Garnish with sliced strawberries. Cover and chill before serve.
