Ingredients
Salt and freshly ground black pepper
1 pound pasta
Olive oil
1/4 pound bacon, chopped
5 cloves garlic, chopped
1/2 cup heavy cream
1/2 cup dry white wine
2 egg yolks
1 cup Parmesan cheese
Fresh flat-leaf parsley, for garnish
Directions
1. Put water in a large saucepot to boil. Add salt and the pasta and cook to al dente.
2. Heat a large skillet over medium heat. Add the olive oil and bacon. Add garlic and cook more. Add wine and stir up all the pan drippings.
3. In a separate bowl, beat yolks, then add 1 large ladle of the pasta cooking water.
4. Drain pasta and add it to the skillet. Pour the egg mixture over the pasta. Coat the pasta quickly so that the eggs are not cooked. Remove pan from heat and add cheese, pepper, and salt. Toss and turn the pasta until it thickens. Garnish with parsley to serve.
